Green Enchiladas & Hibiscus Margarita!
Growing up in a Mexican household in a small border town in South Texas, I had access to the best homecooked Mexican food 24/7! However, when moved away to Boston for college I realized I missed good homecooked Mexican food. I tried a variety of places, but nothing tasted just right. As a result, I started playing around with food. That’s when I really found my passion. Cooking was a way to bring my loved ones together. Hosting soon became a weekly event. I loved every minute of it. It was a way to expose my friends to Mexican cuisine. One of my favorite dishes to make was green enchiladas at home. I couldn’t not seem to find them when I just moved here. However, thanks to Whole Foods I was able to find green tomatillos so, I soon started experimenting. After many many experiments, I concocted a, fast, fresh green enchiladas recipe that tasted just like home. These enchiladas have so much flavor and are really filling. These are vegetarian and gluten free so all my friends could enjoy them! I cook them at least once a week. They never get old trust me. This recipe can be easily modified. If you love spicy add a another pepper, or swap you jalapeños for serrano’s. If you can’t find green tomatillos you can use red tomatoes. Additionally, this salsa base can be used on other recipes. For example, chips and salsa, as a salsa on tacos, or on fried eggs for breakfast. Enough about the enchiladas. No good meal is complete without a proper cocktail! So I decided to pair this dish with a hibiscus margarita. Sweetened hibiscus water was always a staple at my house so why not kick it up a notch with a bit of tequila! Hope you enjoy!

Green Chicken Soup
Raining day meal full of flavor for a dreary day. You slow cook in a Dutch oven or deep pot but I will be using our Gumbo pot. It is deep enough to fill with larger poultry but not too deep that my arm will get engulfed in it. I will be using a Magic bullet as a blender but a food processor will bring the same results. I found this recipe and I was inspired to try it. Surprisingly, it turned out to be one of my families favorite meals. This is a winner in any restaurant or household because it can have the toppings that you choose. We use veggies, cheese, and sour cream because it is our variation of a chicken soup.

Soft Cinnamon Roll Cookies
It wasn’t very long into self-quarantine before I tapped into a baker’s side of myself I wasn’t aware I contained. From berry crepes to raspberry quinoa cookies, I’ve been experimenting with all kinds of recipes. A recent favorite I’ve come across are soft cinnamon roll cookies. This dessert combines two of my favorite treats, cinnamon rolls and sugar cookies. Trust me when I say it doesn't get much better than that! The texture is super soft and delicious, topping it off with luscious cream cheese frosting and more subtle sprinkles of cinnamon.

Fruit tart 🍓
I’ve always been into cooking and baking. For some reason it allows me to express myself in ways I haven’t been able to do so before. I always like a challenge and since I haven’t been able to bake for a while due to student commitments I decided to once again take up my baking skills since I had nothing else of particular interest to do. I’ve never made a fruit tart before, but I sure do enjoy eating them 😅☺️. The recipe is actually very simple.

Dirty Delicious
Oh my gosh! I live for developing recipes, no joke. Literally was just in the kitchen testing out new ratios of ingredients for a tamarind drink that I'm absolutely obsessed with creating (Sorry folks, that one is going in the Mocktail Book, because those choosing to stay sober need drinks toooooooooooo). What I love the most about recipe development is the challenge of finding balance. It's like yeah, sweet things are tasty and salty things are delicious, but a dish that can capture perfect harmony between those two tastes gives me an almost spiritual fulfillment. This sandwich was the first dish I ever created, at my first cooking job where I had to invent specials for the menu, that kindled that feeling.
